Chocolate Mochi Cake
I found this recipe from foodgawker one day and it caught my attention… Well at least the picture did, hehe. I bought all the ingredients except I couldn’t find coconut oil or coconut milk. So I tried using canola oil and regular milk instead.
The texture ended up being pretty dense and heavy. The chocolate ganache I put on top was Hersheys milk chocolate, a little heavy whipping cream, and butter.
So all in all, this cake was pretty much all unhealthy LOL. My mom liked it, since it was a dense type of cake. In my opinion, maybe I shouldn’t have added heavy whipping cream to the ganache. It was too thick.
But now I know what to do for my next mochi cake :)
This is a new self-serve frozen yogurt place on route 22. It has a pretty big dining/lounge area.
I really liked their flavors and selections. I got mango, birthday cake, and strawberry with mochi, and mango and passionfruit pops. Their selections are not like typical flavors. For example, birthday cake and red velvet, and those two combined is called wedding cake. Strawberry and chocolate was called chocolate covered strawberries…etc.
Other than the froyo from Rutgers, I’ve only had Red Mango once, and it wasn’t that good. I definitely like Yo Addiction! more than both places.
First time going, I got chicken joy with a side of corn. It was pretty good. I went with my mom and grandparents. It’s always crowded since it’s a new restaurant. Of course it’s in Jersey City where a lot of Filipinos are. Their peach mango pie is so delicious! I can eat that for breakfast, lunch, and dinner. Hehe don’t worry I didn’t eat all the ones in the picture.
Bear Naked Granola
Out of the ones I’ve already tried (vanilla almond crunch, banana nut, and this one), this and banana nut are in a tie for first. I like the fact that there are enough ‘fruit and nut’ in this mix. Unlike some granola, there’s ‘bearly’ any fruit or nut, mostly granola. Maybe I just got lucky with this bag, but we’ll see next time!
I’ve been wanting to bake new things for a while, but I just never have the patience to try. But this week has been really good: nice weather, took my midterm, not too much stress from work, etc. So I asked one of my sisters for some recipes and she gave me this one. Maybe add more sugar to both the mix and topping and it’ll be better! It was my first time making a whipped topping in a while, and I was a little scared they wouldn’t form. From past experiences, I tend to stay away from whisking things. Which is probably why it’ll take a lot of practice and patience if and when I want to try to make macarons.
Well, all in all, I recommend this recipe if you want that tiramisu flavor in less time than making real tiramisu. Although that doesn’t sound like a bad idea to make. It might be on my future to make list.
Same recipe as the blueberry muffins from the past, but this time I put it in a rectangle baking pan. It took a while longer to bake, but I like how the top (streusel) part came out. There was more of a crunch than when I make the muffins.
Went running for the first time in a while. I think the last time I ran was sometime in the winter…on a treadmill. But surprisingly my mile wasn’t THAT bad, 9:30. Then I walked one, and did half a mile in 4:38.
I’m a little sore in the stomach area, and a little in the thighs, but it’s a good sore!
I want to get back in shape so I can do The Color Run on Sept 1st. It’s a 5k where people throw colored powder on you. It’s supposed to be a fun race, not all about the time. Each color represents the distance you’ve run so far and at the end of the race it’s supposed to be a ‘color party,’ or something like that. I’m planning on signing up with a group: a friend and a few sisters. I’m pretty excited since it’ll be my first outside of school 5k! :D
TJ’s Trail Mix Granola Bars
I was actually hesitant on buying this for some reason. I was browsing the store and wanted to try something new/ something to snack on. I used to always get the Special K blueberry snack bars, for breakfast, so I decided to try this out.
These bars are so little! But I like the texture because they’re chewy/sticky. Make sure you don’t leave it in your bag because they REALLY stick to the wrapper.
There are other flavors such ad dark chocolate, almond, and cashew, I believe. I might stick to this trail mix though.
I have to go back soon!
Haven’t made these in a while. Since I haven’t baked anything in a few weeks, I decided why not? The blueberries were buy one get one free at $3.99 so I have a huge stash in the fridge now.
I’ll probably make another batch or two, and try out a blueberry tart recipe I found soon :)
You’re all probably getting bored of my salad lunches… So this might be the last one. Plus, I ran out of tempeh :(
